How do you begin to sum up 71 years of life of an extraordinary man such as Peter.

He was born January 27, 1950 at Fort Bragg, North Carolina to Retired USAF Major Donald Carroll and Joyce Carroll. Being an Air Force brat, Peter lived in many countries and states.  He lived in Germany, Japan and sailed on the Queen Elizabeth from England while quarantined in the room with Chicken Pox, an experience he stated was full of room service and ice cream. After Don retired, they moved from Wisconsin to Houston and Peter graduated from Madison High School where he played football and achieved the rank of Eagle Scout. While attending college in Alvin he met and married Bonnie (Weis) Jones.  He enlisted in the Air Force at the suggestion of his mother for partying too much and was Honorably discharged and proud to be a Viet Nam Veteran.  Peter and Bonnie then moved from California, back to Texas in 1973 with their new born daughter Tina and enrolled in Sam Houston State University where he received his Bachelor of Science in Criminal Justice Law Enforcement.  Peter and family then moved to Texas City in 1976 after being hired at the Texas City Police Department.  In 1988 he married Beth Carroll and had son Bryan and daughter Sara. During his years of service, he endured numerous hurricanes with his partner in crime Captain Jerry Doraty, and it was interesting  to hear of other experiences only his fellow officers can appreciate, that were often vocalized during their gatherings. He met many people during the best and worse times of their lives and made many friends and hoped that he impacted their lives in a way that was positive and made a difference.  He retired after 29 years of service with the rank of Captain in 2005.

After retirement he was Living the Dream.  He acquired his dream car, a Cadillac CTS, and replaced it every 3 years with a different model and stapled the dealer tags on the garage wall with pride. He enjoyed with friends and family, many memorable cruises, trips and ventures to casinos to shoot craps, hooting “Seven OOOut “ one of his rally cries. He loved his yearly trip to Spring Training for the Astros and of course Disney while there, and his 50th and 70th birthday to Hawaii.  But one of the best was the trip to Boston in 2017, where got to see his Astros clinch the AL Division, went to Cooperstown National Baseball Hall of Fame and he experience the fall color change of New England which he stated was the first time he could tell the difference, being color blind.

He was acclaimed for his steaks, known for his “Jello-shots”, threw epic 4th of July parties and who can ever forget the “Superman flying over a nudist colony, Moo Moo Buck-a-Roo and Block that Point” jokes.  For the ladies, his famous sly move of the point to his cheek for a quick peck and got a kiss when he turned his cheek…one of his favorites.

He enjoyed sitting by the pool with an ice cold Blue Moon with 2 oranges, taking pictures of the sunset and posting on Facebook, playing  Two Card Hold’Em and F-Your Buddy and again Rolling Dice with his gambling companions.  Chicken Fried Steak, mashed potatoes with extra of cream gravy and ONLY LeSuer Very Small Young Sweet Peas.

He was master of the remote who’s exact location at all times was essential, and if lost a massive Search and Rescue Mission occurred and heaven forbid if the cable was temporarily out.  He was waiting with bated breath for season 4 of Yellowstone in November-he thought Jamie did all the dirty deeds.

The Astros were by far his passion.  Went to the game as much as possible, had a yearly date with Sara for the game closest to her birthday in July, took the kids and grandkids when possible and enjoyed Club Level Sections 333-336 seats that had the $15 per ticket concessions or gift shop allowance, always enjoyed a deal. If unable to attend, the games were recorded for viewing as soon as possible. A Bucket list was to attend a World Series game and he attended the first game of the 2017 World Series. He boasted ownership of AL and World Series Replica Rings, multiple Bobble Heads and more jerseys and hats that the law should allow. A travel bag will be sent with him with a change of clothes for his future Astros games.  He passed Monday while listening to the game as they shamefully beat the Rangers 15-1.

Peter will be remembered as a fair, reasonable, honest and kind man. He never judged and tried to help one’s short comings. Have gave respect and was respected and the love for his family and friends was unconditional and never ending.  He had the deepest blue eyes that sparkled even more with his impish smile.  Who can ever forget the raspy voice that was Peters alone and many of the Police Department kids became disillusioned when they connected his voice to Santa.  There was not a convenience store clerk, restaurant server, fast food cashier, bank tellers of Amoco or Mainland Bank or salesperson’s with Dillard’s and Sam’s that did not know Peter during his time.

He touched many lives and cherished his family and friends and enjoyed the times spent with all.  He will be missed immensely by his spouse Beth, daughter and son-in-law Tina and Randy Drinkwater son Bryan and daughter Sara, Grandsons Cameron and Ethan Drinkwater and Granddaughter Caeley Norwood.

Sisters Jill(Phil) Slicker, Gail(the late Stephen) Nash, Sister-in-law Millie Abbott, Brother-in-law Tom(Linda) Abbott, Sr.  Nieces Melissa(Scott) Duncan, Kimberly(Todd) Engle.  Nephews Jeff(Lisa) Beaman, Tom Abbott, Jr., Michael(Miranda) Frazer, Trey(Kris)Abbott, and numerous great and great-great nieces and nephews. Very special person’s extraordinaire Jerry & Judy Doraty who have been there from day one , Kathy & Larry Koltun who were travel buddies, besties and who refined his culinary and beverage skills.

He was preceded in death by his father and mother, Donald and Joyce Carroll, father-in-law and mother-in-law Charles and Jo Ann Abbott, brother-in-law Stephen Nash and sister-in-law Jo Ellen Abbott.

Please dress casually, even better in your favorite Astros shirt, hat or article. Peter despised suits and jeans or shorts were his preferred attire.

Be thinking of your favorite memory or story of Peter. There will be note cards and a basket to place the notes to be read by family at a later date.

Visitation will be Friday, September 24, 2021 from 5-7 and services will be Saturday, September 25, 2021 at 10A at Emken-Linton Funeral Home, Texas City, Texas.

His final party will be held after the services, September 25, 2021 at the Charles T. Doyle Convention Center.
